Peruvian Recipes

Peru ranks amongst the world`s great centers of civilization. Peru is located in the west central part of South America and is a country of geographical and cultural contrast. It has many typical recipes like ceviche de pescado, lomo salteado, papas a la huancaina, arroz con pollo, leche asada, arroz tapado and pisco sour. Papas a la huancaina is my favorite one and I would like to share the recipe with you, if you want to try it and it only takes 20 minutes to prepare the ingredients and 1 hour in general.

Papas a La Huancaina

Ingredients
-10 medium potatoes (new or red a good choice)
-1 pound of cheese (romano, Mexican or feta work well)
-2 small jalapeno peppers
-1 cup evaporated milk
-½ cup vegetable oil
-2 cloves garlic
-8 saltine crackers
-1 tablespoon prepared mustard
-salt and pepper
-lettuce
-3 hard cooked eggs
black olives

Instructions
1. Cook and peel potatoes and allow to cool
2. In a blender, mix the cheese, peppers, milk, oil, garlic, crackers, mustard, salt and pepper. The sauce should be fairly thick; add more crackers if not, or add milk is too thick
3. Lay a bed of lettuce in a serving dish and place the potatoes on top. Cover with the sauce. Cut the hard boiled eggs in half and place on top of the potatoes. Add black olives if desired
4. This dish can be served slightly cold

Appetizers

                                           Spinach Stuffed Mushrooms

                                         

This recipe is an appetizer combining two vegetables Spinach and Mushrooms together. Its very healthy for your organism because most of the ingredients are vegetables and we need them in our body. I ate something similar to this recipe at a restaurant at Miami, Florida called China Grill, instead of spinach it had leek. Its a little bit complicated but I could try something new and improve my cooking skills with something harder than what I cook everyday. It only takes 20 minutes to prepare everything and 25 minutes to cook, so go ahead and try it!

Crepes!

Well a perfect meal for your children in a cold day to stay home are Crepes! Here is a simple but delicious crepe batter which can be made in minutes. It's made from ingredients that everyone has on hand. You dont need to have specific ingredients and its much easier than doing another meal to appetize you.

Basic Crepes

Ingredients:
-1 cup of flour
-2 eggs
-1/2 cup of milk
-1/2 cup of water
-1/4 teaspoon of salt
-2 tablespoons of melted butter

Instructions:
1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
3.Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Italian Sandwich!

I learned to prepare Italian Sandwich! It is much easier than doing any other sanwich and its delicious. The Basil, Tomato and Mozzarella sandwich is a quick and refreshing vegeterian meal (not cooked) to do.Basil, mozzarella and tomato on Italian bread. Great for those hot summer evenings when you don't feel like cooking.

Basil, Tomato and Mozzarella Panini

Ingredients:
-1 loaf of Italian Bread (Panini)
-6 fresh Basil leaves (chopped)
-2 sliced Tomatoes
-4 oz of Sliced fresh Mozzarella cheese
-1/8 teaspoon red pepper flakes
-1/2 cup of Balsamic Vinegar

Instructions:
1. Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches.
2. In a small dish, stir together the balsamic vinegar and red pepper flakes. Use as a dipping sauce.

Essential Cooking

   I am learning to cook essential recipes like mashed potatoes , rice, sandwich, etc. Rice is much easier than the others. I love cooking this essential recipes because they are much easier than cooking a sophisticated plate that takes much more patience to do.

Rice

Ingredients:
- 1 cup of Rice (depending on the quantity you would like to cook)
-1 Whole chopped Garlic
-2 cup of Water
-Oil

Instructions:
1.Pour the some Oil in a well cleaned pan.
2.Add the cup of Rice with the Oil so the rice starts to toast.
3. Add the chopped garlic and 1 tablespoon of salt to the toasted rice.
4. Finally pour the 2 cups of water and leave it 20 or 30 minutes to boil.

Romantic Dinner Recipes

          If you want a romantic and delicious dinner with your boyfriend or husband, I have the right recipe for you guys. First of all you have to be in a good atmosphere and relaxing moment. You must decorate it with candles, roses and incense. Its the perfect way to celebrate an anniversary, Valentine's day and even a romantic birthday dinner. You serve this dinner with some Wine that gives us a color and matches to the roses.

Rack of Lamb with Herbes de Provence and Roasted Tomatoes

Ingredients: 
-2 cloves of garlic (peeled)
-1 teaspoon of Salt
-3/4 teaspoon of Ground Pepper
-3 tsp. finely chopped fresh Thyme
-2 tsp. finely chopped fresh Rosemary
-1/4 C. olive oil
-2 ripe tomatoes, halved
-1 rack of lamb, frenched (about 1 lb.)
-2 shallots
-2 med. white potatoes, peeled
-2 tbsp. white wine

Instructions:
1. Preheat oven to 400 degrees F.
2. Chop garlic and place in a small bowl  and sprinkle with 1/2 tsp. each salt and pepper. Mash into a paste. Stir in chopped herbs and half of the olive oil.
3. To prepare tomatoes, cut in half. Grease a pie plate or other baking dish and place tomatoes, cut-side-up, inside. Drizzle with about 1/3 of your garlic/herb mixture. Set aside.
4. Rinse rack of lamb and pat dry. Cut in half.
5. Sprinkle with remaining 1/4 tsp. each salt and pepper.
6. In an oven safe skillet or frying pan, heat 1 tbsp. olive oil until quite hot over moderate-high heat. Brown rack of lamb on all sides. Set aside.
7. To prepare the remaining vegetables, slice potatoes into 1/4" slices. Peel and slice shallots thinly.
8. Add remaining olive oil to skillet. Heat over medium. Add potatoes and shallots and cook until beginning to brown, about three to five minutes. Stir occasionally. Stir in wine and about half of your garlic herb mixture. Sprinkle with additional salt and pepper to taste. Set aside.
9. Into the fat side of your racks of lamb, rub in the rest of your garlic herb mixture.
10. Place baking dish with tomatoes in the oven. Roast 30-40 minutes, until very tender.
11. Place racks of lamb upright in skillet on top of potato mixture. To keep the two half-racks steady, nest the exposed bones together at the top.
12. Roast lamb and potatoes about 20 to 25 minutes, until the internal temperature of lamb reads about 130 degrees for medium rare.
13. When lamb has reached your desired level of doneness, remove from oven and tent with foil. Let sit 5 to 10 minutes.
14. Slice rack into chops if desired and serve with potatoes and tomatoes.

Steak along with Port Wine Sauce:



Ingredients:

  • 1 pound of Meat
  • 50ml of Port Wine
  • 2 tablespoons of Butter
  • Thyme Leaf
Directions:
  • First heat the pan on a medium high heat and place the 2 tablespoons of butter heating.
  • Grab the 1 pound of meat and pour some Thyme.
  • Cook the meat and wait until it is cooked.
  • Pour some of the Port Wine into the pan with the Tenderloin Meat and it will have a little flame but the alcohol will evaporate.
  • It is ready to be served, serve Warm.








This recipe was invented by my grandmother. My father learned to do it before she died and I have to learn it too so when I have children I can teach them how to cook this delicious and sophisticated plate. I will be posting more recipes each day!
